1 ½ pounds chicken thighs or drumsticks

1 cup buttermilk

1 ½ cups all-purpose flour

¼ cup cornstarch

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

2 large eggs

1 teaspoon salt

½ teaspoon black pepper

Oil for frying

½ cup honey

1 teaspoon red pepper flakes

1 tablespoon apple cider vinegar

2 tablespoons butter


Instructions

1. Marinate chicken in buttermilk with salt and pepper for at least 2 hours or overnight.

2. Prepare three bowls: seasoned flour with cornstarch and spices, beaten eggs, and a second bowl of flour mix.

3. Dredge chicken from buttermilk into flour, egg, then flour again, pressing to coat well.

4. Heat oil to 350°F in a heavy-bottom skillet. Fry chicken in batches until golden and cooked through (165°F internal temperature).

5. Drain on a wire rack to keep crispy.

6. In a small saucepan, melt butter with honey, red pepper flakes, apple cider vinegar, and a pinch of salt. Simmer for 2–3 minutes.
