Ingredients
12 oz soft caramels
2 tablespoons heavy cream
48 Ritz crackers (about 1 sleeve)
12 oz white chocolate chips or melting wafers
3 tablespoons holiday sprinkles
Instructions
1. Unwrap the caramels and place them in a microwave-safe bowl with the heavy cream. Microwave in 30-second intervals, stirring each time, until smooth and melted.
2. Lay out half the Ritz crackers on a parchment-lined baking sheet.
3. Spoon about 1 teaspoon of the melted caramel onto each cracker.
4. Top with another cracker to form a sandwich. Let them sit for 5 minutes.
5. In another bowl, melt the white chocolate in short bursts in the microwave, stirring until smooth.
6. Dip each caramel sandwich into the melted white chocolate using a fork or dipping tool.
7. Tap off excess chocolate and place on the parchment-lined sheet.
8. Immediately sprinkle with holiday sprinkles before the chocolate sets.
9. Let cookies rest at room temperature or refrigerate until the coating hardens.
10. Serve or store in an airtight container.
Notes
Use wrapped soft caramels for best consistency — avoid jarred caramel sauces which can be too runny.
Let the caramel thicken for a few minutes before assembling to prevent leaks.
If using white chocolate chips, add ½ teaspoon of coconut oil to help with melting and coating.
