1 cup green lentils, rinsed
3 cups vegetable broth
1/2 teaspoon salt
1/4 teaspoon black pepper
3/4 cup canned coconut milk (full fat or lite)
Fresh basil or thyme, for garnish
Instructions
1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until soft and translucent, about 5 minutes.
2. Stir in the minced garlic and cook for another 1 minute until fragrant.
