Ingredients
8 oz (225g) cream cheese, softened
1/2 cup powdered sugar
1/2 cup raspberries (fresh or thawed from frozen, drained)
3/4 cup graham cracker crumbs
1/2 tsp vanilla extract
8 oz (225g) white chocolate, chopped or in melting wafers
Optional toppings: freeze-dried raspberry powder, coconut flakes, extra melted white chocolate for drizzling
Instructions
- In a medium bowl, beat cream cheese and powdered sugar until smooth and fluffy.
- Fold in raspberries, vanilla extract, and graham cracker crumbs. Mix until well combined and thick.
- Cover and refrigerate for 1 hour to firm the mixture.
- Scoop and roll into small balls, place on a parchment-lined tray.
- Chill the balls for 30 minutes until firm.
- Melt the white chocolate using a double boiler or microwave, stirring until smooth.
- Dip each ball into the melted white chocolate and place back on the tray.
- Garnish with desired toppings and chill until chocolate sets (about 15–20 minutes).
