Description
These Italian Antipasto Skewers with Marinated Tortellini and Mozzarella are the ultimate no-cook appetizer, perfect for parties, holidays, or quick bites. Ingredients
9 oz cheese tortellini (cooked and cooled)
1 cup mozzarella balls (ciliegine)
1 cup cherry tomatoes
12 slices salami
1/2 cup green olives
1/2 cup Kalamata olives
1/3 cup fresh basil leaves
1/2 cup Italian dressing or herb marinade
Instructions
1. Cook the tortellini according to package instructions. Drain, cool, and toss in Italian dressing or marinade. Refrigerate for at least 30 minutes.
2. Rinse and dry the cherry tomatoes and basil. Slice salami slices in half and fold into quarters.
3. Drain olives and pat mozzarella dry if needed.
4. On each skewer, thread ingredients in alternating order: tortellini, salami, mozzarella, olive, tomato, basil. Repeat pattern as desired.
5. Once all skewers are assembled, brush lightly with leftover marinade.
6. Chill the skewers until ready to serve. Serve cold or at room temperature.
Notes
Let tortellini marinate for at least 30 minutes to absorb the full flavor.
Pat all ingredients dry to prevent soggy skewers.
Add basil leaves just before serving for the freshest look and taste.
