This creamy Italian Sausage Soup recipe is a comforting one-pot meal packed with spicy sausage, cheese tortellini, tomatoes, and spinach. Perfect for weeknight dinners or cozy weekends, it’s rich, flavorful, and family-approved.
Ingredients
1 lb Italian sausage (mild or hot)
1 package (9 oz) cheese tortellini
1 medium yellow onion, chopped
3 cloves garlic, minced
1 can (28 oz) crushed tomatoes
4 cups chicken broth
1 cup heavy cream
3 cups fresh spinach or chopped kale
1 tsp Italian seasoning
1/4 tsp crushed red pepper flakes (optional)
Salt and pepper to taste
Instructions
1. Heat a large Dutch oven over medium-high heat. Add the Italian sausage and cook until browned, breaking it apart with a spoon.
2. Add chopped onion and minced garlic to the pot. Sauté for 3–5 minutes until fragrant and translucent.
3. Pour in crushed tomatoes and chicken broth. Stir well, scraping up any browned bits from the bottom of the pot.
4. Bring the soup to a gentle boil, then reduce to a simmer. Add Italian seasoning, crushed red pepper (if using), salt, and pepper. Simmer for 15 minutes.
5. Lower the heat and stir in the heavy cream. Add the tortellini and cook for 5–7 minutes, or until pasta is tender.
6. Stir in spinach or kale and cook for 1–2 more minutes, just until wilted.
7. Taste and adjust seasoning if needed. Serve hot with fresh Parmesan and crusty bread.
Notes
For a lighter version, use half-and-half instead of heavy cream.
Sweet Italian sausage can be used if you prefer less spice.
Add tortellini just before serving if you plan to store or freeze the soup.
