Ingredients

1 lb shrimp, peeled and deveined

2 fresh jalapeños, thinly sliced (seeds removed for less heat)

4 garlic cloves, minced

1 medium onion, diced

1 1/2 cups fresh or canned diced tomatoes

4 cups seafood or chicken broth

2 tbsp olive oil

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

Optional: corn, black beans, or rice

Instructions

  1. Build the Flavor Base: Heat olive oil in a large pot over medium heat. Add diced onions and cook for 5 minutes until translucent. Add garlic and jalapeños, sauté for 2 more minutes.
  2. Add Tomatoes and Broth: Stir in the tomatoes and cook for another 5 minutes. Pour in the broth and bring to a gentle boil.
  3. Simmer the Soup: Lower the heat and let it simmer for 10-15 minutes to develop flavor.
  4. Add the Shrimp: Add shrimp to the broth and cook for 3-4 minutes, until pink and opaque.
  5. Final Touches: Season with salt and pepper, stir in cilantro and lime juice. Let rest off heat for a few minutes before serving.
