Description
A spicy, creamy, and crunchy salad that brings all the flavors of jalapeno poppers into a refreshing dish. Perfect for BBQs, potlucks, or taco nights.
Ingredients
4 cups corn kernels (fresh or frozen, thawed)
2–3 fresh jalapenos, sliced (seeds removed for less heat)
6 slices bacon, cooked and crumbled
1/2 cup red onion, finely chopped
4 oz cream cheese, softened
1/3 cup sour cream or mayo
1/2 cup shredded cheddar cheese
1/4 cup cilantro, chopped
Juice of 1 lime
Salt and pepper to taste
Pinch of smoked paprika or chili powder (optional)
Instructions
- Chop the onion, slice jalapenos, cook and crumble bacon, chop cilantro, and prepare the corn.
- In a bowl, mix cream cheese, sour cream or mayo, lime juice, salt, pepper, and paprika until smooth.
- Combine corn, jalapenos, bacon, onion, cheddar, and cilantro in a large bowl.
- Pour dressing over and toss gently to coat.
- Chill for at least 30 minutes before serving. Top with extra bacon or jalapeno slices if desired.
