Description

A spicy, creamy, and crunchy salad that brings all the flavors of jalapeno poppers into a refreshing dish. Perfect for BBQs, potlucks, or taco nights.


Ingredients

4 cups corn kernels (fresh or frozen, thawed)

23 fresh jalapenos, sliced (seeds removed for less heat)

6 slices bacon, cooked and crumbled

1/2 cup red onion, finely chopped

4 oz cream cheese, softened

1/3 cup sour cream or mayo

1/2 cup shredded cheddar cheese

1/4 cup cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

Pinch of smoked paprika or chili powder (optional)


Instructions

  1. Chop the onion, slice jalapenos, cook and crumble bacon, chop cilantro, and prepare the corn.
  2. In a bowl, mix cream cheese, sour cream or mayo, lime juice, salt, pepper, and paprika until smooth.
  3. Combine corn, jalapenos, bacon, onion, cheddar, and cilantro in a large bowl.
  4. Pour dressing over and toss gently to coat.
  5. Chill for at least 30 minutes before serving. Top with extra bacon or jalapeno slices if desired.
