Description

These Jalapeno Popper Egg Rolls are a crispy, cheesy, and spicy appetizer perfect for parties and game day. Ingredients

4 fresh jalapenos, halved and deseeded

8 oz cream cheese, softened

1 cup shredded cheddar cheese

6 slices cooked bacon, chopped

2 green onions, finely sliced

1 teaspoon garlic powder

12 egg roll wrappers

Oil for frying (vegetable or canola)


Instructions

1. In a medium mixing bowl, combine the cream cheese, cheddar cheese, chopped bacon, green onions, and garlic powder. Mix until smooth and fully combined.

2. Place an egg roll wrapper on a clean surface in a diamond position. Spoon 1–2 tablespoons of the mixture in the center and top with a jalapeno half.

3. Fold the bottom corner over the filling, then fold in the sides. Roll tightly and seal the top edge with a dab of water.

4. Heat oil in a skillet or fryer to 350°F (175°C). Carefully fry 3–4 egg rolls at a time for 3–4 minutes per side or until golden brown.

5. Remove and drain on paper towels. Let cool slightly before serving with ranch or preferred dipping sauce.

Notes

Adjust the heat level by leaving in some jalapeno seeds or swapping for serrano peppers.

For a lighter option, bake at 400°F for 15–18 minutes or air fry at 375°F for 8–10 minutes.

Freeze uncooked egg rolls and fry directly from frozen when needed.
