Kompot

  • Author: Kate Walton
  • Total Time: 30 minutes
  • Yield: About 2 liters (serves 6–8)

Description

A traditional Eastern European fruit drink, Kompot is made by simmering seasonal fruits in water with sugar until their flavors infuse the liquid. It’s naturally sweet, colorful, and refreshingly delicious—perfect served chilled over ice or warm on cozy days.

Ingredients

1 cup strawberries, hulled and halved

1 cup peach slices (fresh or canned, drained)

1/2 cup blueberries

1/2 to 3/4 cup granulated sugar (to taste)

8 cups water

1 tablespoon lemon juice (optional)

Instructions

  1. Wash and prepare the fruits: hull and halve the strawberries, slice the peaches, and leave the blueberries whole.
  2. Place all fruits into a large pot and add 8 cups of water.
  3. Stir in the sugar and bring the mixture to a gentle boil over medium heat.
  4. Reduce the heat and let it simmer for 15–20 minutes.
  5. Remove from heat. Strain the liquid into a pitcher or leave the fruit in, based on preference.
  6. Cool to room temperature, then refrigerate until chilled.
  7. Serve over ice with optional lemon juice or garnished with a few fruit pieces.
