Ingredients
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup unsalted butter, softened
1 cup granulated sugar
1 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract
2 cups rolled oats
1 cup sweetened shredded coconut
1 cup chopped pecans
2 cups semi-sweet chocolate chips
Instructions
1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
3. Add eggs one at a time, mixing well after each. Stir in the vanilla extract.
4. In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
5. Gradually mix dry ingredients into wet ingredients just until combined.
6. Fold in oats, coconut, pecans, and chocolate chips with a spatula or mixer on low.
7. Scoop dough using a large cookie scoop or 1/4 cup measure and place on prepared sheets, spacing cookies apart.
8. Bake for 12–15 minutes until edges are golden brown and centers are just set.
9. Cool on the baking sheet for 2–3 minutes before transferring to a wire rack to cool completely.
