Description

This Layered Burrito Casserole recipe is a crowd-pleasing Tex-Mex casserole packed with ground beef, black beans, corn, tortillas, salsa, and gooey cheese. Perfect for busy weeknights, meal prep, or family dinners, it’s a comforting, customizable dish you’ll want on repeat.


Ingredients

500g ground beef

1 packet taco seasoning

1 can black beans, drained

1 cup corn kernels

6 flour tortillas

1 cup salsa

1 cup sour cream

2 cups shredded cheddar cheese

1 small onion, diced

2 cloves garlic, minced


Instructions

1. Brown the ground beef in a large skillet over medium heat.

2. Add diced onion and minced garlic, cook until softened.

3. Stir in taco seasoning, black beans, corn, and salsa; simmer a few minutes.

4. In a greased 9×13-inch baking dish, layer flour tortillas.

5. Spread half the meat mixture over tortillas, dollop with sour cream, sprinkle with cheese.

6. Repeat layers, topping with remaining cheese.

7. Cover with foil, bake at 350°F (175°C) for 25 minutes.

8. Remove foil, bake an additional 10 minutes until cheese is bubbly and golden.

9. Let cool for a few minutes, garnish with cilantro, jalapeños, or extra sour cream before serving.

Notes

Use mild or spicy salsa to control heat level.

Corn tortillas can replace flour tortillas for a gluten-free option.
