Description

This comforting Layered Burrito Casserole is packed with classic Tex-Mex flavors—layers of seasoned beef, creamy beans, sweet corn, melty cheese, and soft tortillas. It’s perfect for family dinners, gatherings, or make-ahead meals. Simple to prepare, yet full of bold and satisfying flavor in every bite.


Ingredients

1 lb ground beef

1 packet taco seasoning

1/4 cup water

1 can (15 oz) refried beans

1 can (15 oz) black beans, drained and rinsed

1 cup frozen corn, thawed

1 cup salsa

6 large flour tortillas

2 cups shredded cheddar cheese

Fresh cilantro, for garnish (optional)


Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, brown ground beef. Drain excess fat.
  3. Stir in taco seasoning and water. Simmer until thickened.
  4. In a bowl, mix refried beans, black beans, and corn.
  5. Layer two tortillas in the baking dish. Spread a third of the bean mix, a third of the beef, a few spoonfuls of salsa, and a layer of cheese.
  6. Repeat layers two more times, ending with cheese.
  7. Cover with foil and bake for 20 minutes.
  8. Remove foil and bake another 10 minutes until cheese is bubbly and golden.
  9. Let cool slightly. Garnish with cilantro and serve.
