Ingredients
1 lb ground beef
1 packet taco seasoning
1/4 cup water
1 can (15 oz) refried beans
1 can (15 oz) black beans, drained and rinsed
1 cup frozen corn, thawed
1 cup salsa
6 large flour tortillas
2 cups shredded cheddar cheese
Fresh cilantro, for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a skillet over medium heat, brown ground beef. Drain excess fat.
- Stir in taco seasoning and water. Simmer until thickened.
- In a bowl, mix refried beans, black beans, and corn.
- Layer two tortillas in the baking dish. Spread a third of the bean mix, a third of the beef, a few spoonfuls of salsa, and a layer of cheese.
- Repeat layers two more times, ending with cheese.
- Cover with foil and bake for 20 minutes.
- Remove foil and bake another 10 minutes until cheese is bubbly and golden.
- Let cool slightly. Garnish with cilantro and serve.
