Ingredients
18 frozen taquitos
1 can (15 oz) red enchilada sauce
2 cups shredded cheddar cheese
1 cup sour cream (for topping)
1 jalapeño, sliced (optional)
1 tomato, chopped
1 cup chopped lettuce
Instructions
1. Preheat the oven to 400°F (200°C).
2. Arrange frozen taquitos in a 9×13-inch baking dish, snugly side by side.
3. Pour the enchilada sauce evenly over the taquitos.
4. Sprinkle shredded cheddar cheese generously on top.
5. Cover the dish with aluminum foil and bake for 20 minutes.
6. Remove foil and bake an additional 5-10 minutes until cheese is bubbly and lightly golden.
7. Top with sour cream, jalapeños, tomatoes, and lettuce before serving.
8. Serve warm and enjoy!
Notes
Freshly grated cheese melts more evenly and tastes better than pre-shredded.
Corn taquitos hold up better under sauce compared to flour taquitos.
For a spicier version, use hot enchilada sauce and double the jalapeños.
