Description

These Lazy Girl Pecan Pie Bars are the ultimate shortcut dessert—rich, gooey pecan filling layered over a buttery shortbread crust. Perfect for holidays, potlucks, or weeknight cravings, this easy pecan pie bar recipe requires no pie crust but delivers all the flavor of a classic pecan pie. Ideal for make-ahead, freezing, or gifting, it’s a must-try for any dessert lover.

Ingredients

1 cup unsalted butter, softened

1/2 cup granulated sugar

2 cups all-purpose flour

1/2 teaspoon salt

1 cup light corn syrup

1 cup brown sugar, packed

4 large eggs

1 1/2 teaspoons vanilla extract

2 cups chopped pecans

1/4 teaspoon salt

Instructions

1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.

2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

3. Mix in flour and 1/2 teaspoon of salt until a soft dough forms.

4. Press dough evenly into the prepared pan and bake for 18–20 minutes until lightly golden. Let cool slightly.

5. In another bowl, whisk together corn syrup, brown sugar, eggs, vanilla extract, and 1/4 teaspoon salt until smooth.

6. Stir in chopped pecans until evenly coated.

7. Pour the pecan mixture over the baked crust and spread evenly.

8. Bake for 30–35 minutes until the edges are set and the center slightly jiggles.

9. Cool completely in the pan. For best slicing, refrigerate for 1 hour before cutting into bars.

Notes

Let bars cool fully before slicing to get clean, firm edges.

Light corn syrup gives a classic flavor; dark syrup adds deeper richness.

Toast the pecans for 5–7 minutes before adding for extra nuttiness.
