Ingredients
2 chicken breasts, cubed
2 tbsp Cajun seasoning
1 lemon, juice and zest
3 cloves garlic, minced
1 cup heavy cream
2 tbsp butter
1 cup Parmesan cheese, grated
12 oz rotini pasta
2 tbsp fresh parsley, chopped
1 tbsp fresh basil, chopped
Salt and pepper to taste
Instructions
1. Season chicken with Cajun seasoning, lemon zest, and salt.
2. Heat skillet with oil and sear chicken until golden and cooked through.
3. Cook rotini in salted water until al dente; reserve 1/2 cup pasta water and drain.
4. In the skillet, melt butter, sauté garlic until fragrant, then stir in heavy cream.
5. Simmer, whisk in Parmesan until smooth.
6. Add herbs, adjust with reserved pasta water.
7. Toss pasta in sauce, serve with chicken, drizzle with lemon juice, and garnish.
Notes
Use freshly grated Parmesan for the smoothest sauce.
