Description

A zesty, wholesome one-pan dinner made with tender chicken strips, al dente orzo pasta, and a rainbow of fresh vegetables. This stir fry brings together refreshing lemon flavor and vibrant textures for a nourishing, easy-to-make meal perfect for any night of the week.


Ingredients

1 lb boneless, skinless chicken breasts, cut into strips

1 cup orzo pasta

1 tbsp olive oil

1 yellow bell pepper, diced

1 cup cherry tomatoes, halved

1 cup broccoli florets

2 cloves garlic, minced

Juice of 1 lemon (plus lemon wedges for garnish)

Zest of 1 lemon

1/4 cup fresh parsley, chopped

Salt and black pepper, to taste

Optional: red pepper flakes for heat


Instructions

  1. Cook orzo in salted boiling water until al dente. Drain and set aside.

  2. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then sear until golden and cooked through. Remove and set aside.

  3. In the same skillet, sauté bell pepper, broccoli, and garlic until tender-crisp. Add cherry tomatoes and cook briefly.

  4. Return chicken and orzo to the skillet. Add lemon juice, zest, and parsley. Toss to combine and adjust seasoning.

  5. Serve hot with lemon wedges and extra parsley.
