Ingredients
1 lb chicken breast, cut into bite-size pieces
3 cloves garlic, minced
1 tbsp lemon zest
2 tbsp lemon juice
4 tbsp butter, divided
1 tbsp olive oil
8 oz linguine pasta
1 cup heavy cream
1 cup grated parmesan cheese
1/2 tsp salt
1/4 tsp black pepper
2 tbsp chopped fresh parsley (optional)
Instructions
1. Season chicken with salt and pepper. Heat skillet with olive oil and 2 tbsp butter. Cook chicken until golden and cooked through, about 4-5 minutes per side. Remove and set aside.
2. In same skillet, add remaining butter and garlic. Cook 1-2 minutes. Stir in lemon zest and juice, scraping the pan for flavor.
3. Cook linguine in salted water until al dente. Reserve 1/2 cup pasta water, then drain.
4. In a saucepan, heat heavy cream. Stir in parmesan until melted and smooth. Add reserved pasta water to loosen sauce if needed.
5. Toss cooked pasta with cheese sauce. Plate and top with chicken bites. Garnish with parsley and more parmesan if desired.
Notes
Let chicken rest after searing to lock in juices.
Use fresh lemon for the brightest flavor.
Warm pasta water helps emulsify and smooth the sauce.
