Description

Lemony Herby Rice is a vibrant side dish made with long grain rice, lemon zest, garlic, and fresh herbs. This easy and flavorful rice recipe is perfect for pairing with chicken, seafood, or roasted vegetables. Ideal for meal prep and naturally vegan-friendly.


Ingredients

1 cup long grain white rice

1 ½ cups water or vegetable broth

1 tablespoon olive oil

2 cloves garlic, minced

1 medium lemon, zested and juiced

¼ cup fresh parsley, chopped

½ teaspoon salt


Instructions

1. Heat olive oil in a medium saucepan over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

2. Stir in the rice, coating it well with the oil. Toast lightly for 2-3 minutes.

3. Pour in water or broth and add salt. Bring to a boil.

4. Reduce heat to low, cover, and simmer for 15-18 minutes until the liquid is absorbed.

5. Fluff rice with a fork. Stir in lemon zest, lemon juice, and chopped parsley.

6. Serve warm, garnished with extra parsley or lemon if desired.

Notes

This rice gets better as it sits, making it ideal for meal prep.

For extra zest, double the lemon zest and juice.

If using broth, adjust salt to taste as broth may already be salty.
