Ingredients
1 lb ground beef
1 packet taco seasoning
¼ cup water
1 cup chopped bell peppers (red, green, and/or yellow)
½ cup chopped red onion
1 ½ cups shredded cheddar-Monterey Jack cheese blend
6 medium (8-inch) flour tortillas
1 tbsp oil or butter (for toasting)
Fresh cilantro (optional, for garnish)
Instructions
- Heat a skillet over medium-high heat. Cook ground beef until browned. Drain excess fat.
- Add taco seasoning and water to the beef. Simmer for 2-3 minutes until thickened.
- Stir in chopped bell peppers and red onion. Cook for another 3-4 minutes until tender.
- Lay out tortillas and divide the beef mixture among them. Top with shredded cheese.
- Fold tortillas into pockets, tucking in the sides.
- Heat a skillet or griddle with oil or butter. Toast pockets seam-side down until golden and cheese melts, about 2-3 minutes per side.
- Serve hot, garnished with cilantro if using.
