Ingredients
2 cups hummus (store-bought or homemade)
1/2 cup cherry tomatoes, halved
1/4 cup Kalamata olives
1/4 cup green olives
2 tablespoons pine nuts
2 tablespoons fresh parsley, chopped
1/2 teaspoon paprika (smoked or sweet)
2 tablespoons olive oil
Pita or flatbread, for serving
Instructions
- Spread the hummus in a shallow bowl, swirling with a spoon to create texture.
- In a small bowl, mix cherry tomatoes with a pinch of salt and 1 teaspoon olive oil. Let sit 5-10 minutes.
- Toast pine nuts in a dry skillet over medium heat for 2-3 minutes until golden.
- Arrange tomatoes, olives, and pine nuts over the hummus.
- Drizzle with remaining olive oil, sprinkle with paprika and parsley.
- Serve with warmed pita or flatbread.
