Description

A colorful and flavor-packed twist on classic hummus. This version is topped with juicy tomatoes, briny olives, toasted pine nuts, and a drizzle of olive oil for an elegant mezze presentation.


Ingredients

2 cups hummus (store-bought or homemade)

1/2 cup cherry tomatoes, halved

1/4 cup Kalamata olives

1/4 cup green olives

2 tablespoons pine nuts

2 tablespoons fresh parsley, chopped

1/2 teaspoon paprika (smoked or sweet)

2 tablespoons olive oil

Pita or flatbread, for serving


Instructions

  1. Spread the hummus in a shallow bowl, swirling with a spoon to create texture.
  2. In a small bowl, mix cherry tomatoes with a pinch of salt and 1 teaspoon olive oil. Let sit 5-10 minutes.
  3. Toast pine nuts in a dry skillet over medium heat for 2-3 minutes until golden.
  4. Arrange tomatoes, olives, and pine nuts over the hummus.
  5. Drizzle with remaining olive oil, sprinkle with paprika and parsley.
  6. Serve with warmed pita or flatbread.
