Ingredients
1 cup green or brown lentils
3 large carrots
1/2 red onion
1/4 cup fresh parsley
2 tablespoons fresh mint
3 tablespoons olive oil
1 lemon (juice and zest)
1 garlic clove
1/2 cup feta cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Rinse the lentils thoroughly and cook them in a saucepan with 3 cups of water for about 18 to 20 minutes until tender but not mushy. Drain and let cool slightly.
2. Thinly slice the carrots using a sharp knife or mandoline. Finely chop the red onion, parsley, and mint.
3. In a small bowl, whisk together olive oil, lemon juice, lemon zest, grated garlic, salt, and black pepper.
4. In a large mixing bowl, combine the cooked lentils, carrots, onion, and herbs.
