Ingredients

1 lb ground beef

1 medium zucchini, sliced

1 cup cherry tomatoes, halved

1 small red onion, chopped

1/2 cup green or kalamata olives

2 garlic cloves, minced

2 tablespoons olive oil

1 teaspoon paprika

1/2 teaspoon ground cumin

Salt and pepper to taste

Fresh parsley for garnish (optional)


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped red onion and cook until translucent, about 3-4 minutes.
  3. Stir in garlic and cook for 1 minute.
  4. Add ground beef, breaking it apart with a spoon. Cook until browned.
  5. Season with paprika, cumin, salt, and pepper.
  6. Add zucchini and cherry tomatoes. Cook for 5-7 minutes until tender.
  7. Stir in olives and cook for 2 more minutes.
