A Mediterranean twist on pizza night, this recipe brings together grilled chicken, creamy tzatziki, and fresh veggies on warm, crisp naan bread. Quick, colorful, and full of bold flavor, it’s a weeknight winner you’ll want to make again and again.
Ingredients
2 naan breads
1 large chicken breast, boneless and skinless
1/2 cup tzatziki sauce
1/2 cup cherry tomatoes, halved
1/4 red onion, thinly sliced
2 tablespoons chopped fresh parsley
2 tablespoons olive oil
Juice of 1 lemon
1 clove garlic, minced
1/2 teaspoon dried oregano
Salt and black pepper to taste
Instructions
- In a bowl, mix 1 tablespoon olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Marinate the chicken in this mixture for at least 30 minutes.
- Grill chicken over medium-high heat for 5–6 minutes on each side, or until fully cooked. Let it rest, then slice into strips.
- Brush naan with remaining olive oil and toast in a skillet or under the broiler until golden.
- Top naan with sliced grilled chicken, cherry tomatoes, and red onions.
- Bake in a preheated oven at 400°F (200°C) for 5–7 minutes until heated through.
- Remove and drizzle with tzatziki sauce. Sprinkle with chopped parsley.
- Slice and serve immediately.
