Ingredients
2 tablespoons olive oil
1 small onion, finely chopped
3 cloves garlic, minced
1/2 teaspoon red pepper flakes (optional)
1 can (14 oz) diced tomatoes, with juices
2 cans (15 oz each) white beans, drained and rinsed
4 cups vegetable broth
1 bunch kale or Swiss chard, stems removed and leaves chopped
Salt and freshly ground black pepper, to taste
Juice of 1/2 lemon (optional)
Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a pot over medium heat. Add onion and cook until softened.
- Add garlic and red pepper flakes; cook briefly.
- Stir in tomatoes and simmer a few minutes.
- Add beans and broth; bring to a boil then simmer.
- Add greens and cook until wilted.
- Season with salt, pepper, and lemon juice.
- Garnish with parsley before serving.
