Ingredients
1 lb ground beef
1 can Rotel tomatoes with green chilies (10 oz)
1 cup sour cream
16 oz Velveeta cheese, cubed

2 tbsp chopped fresh cilantro (optional, for garnish)
Instructions
1. In a large skillet over medium heat, add the ground beef. Use a wooden spoon to break it into crumbles. Cook until browned and no longer pink. Drain excess fat if needed.
2. Add the taco seasoning, if using, and stir to coat the meat. Cook for 1 more minute.
3. Stir in the Rotel tomatoes (do not drain). Simmer for 2–3 minutes to combine flavors.
4. Reduce heat to low, then add the cubed Velveeta cheese. Stir constantly until melted and smooth.
5. Remove from heat and stir in the sour cream until fully blended.
6. Transfer to a serving bowl or slow cooker. Garnish with chopped cilantro if desired. Serve hot with chips or veggies.
