Ingredients
16 jumbo pasta shells
2 cups cooked shredded chicken
1 cup ricotta cheese
4 oz cream cheese, softened
2 cups shredded mozzarella cheese, divided
1/2 cup grated Parmesan cheese
2 cups Alfredo sauce
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
1. Preheat your oven to 350°F (175°C).
2. Bring a large pot of salted water to a boil and cook pasta shells until al dente. Drain and rinse with cold water.
3. In a mixing bowl, combine ricotta, cream cheese, 1 cup mozzarella, Parmesan, shredded chicken, Italian seasoning, salt, and pepper. Mix until smooth.
4. Spoon the chicken mixture into each cooked pasta shell.
5. Spread 1 cup of Alfredo sauce at the bottom of a 9×13-inch baking dish.
6. Arrange the stuffed shells in the baking dish. Pour remaining Alfredo sauce evenly over the shells.
7. Sprinkle remaining 1 cup of mozzarella cheese over the top.
8. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes, until bubbly and golden.
9. Garnish with fresh parsley before serving.
Notes
For extra creaminess, add a splash of milk or extra Alfredo when reheating leftovers.
