Ingredients
1 cup unsalted butter (softened)
1/2 cup granulated sugar
2 cups all-purpose flour
1/2 cup unsalted butter (for caramel)
1/2 cup brown sugar
1 can (14 oz) sweetened condensed milk
2 tablespoons golden syrup or corn syrup
1 1/2 cups dark chocolate chips or chopped chocolate
Flaky sea salt (optional, for topping)
Instructions
1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
2. In a bowl, cream 1 cup softened butter and granulated sugar until light. Mix in flour to form dough.
3. Press dough into the prepared pan. Bake for 18–20 minutes or until lightly golden. Let cool completely.
4. In a saucepan, combine 1/2 cup butter, brown sugar, condensed milk, and syrup. Cook over medium heat, whisking constantly, until thickened and golden (about 10 minutes).
5. Pour caramel over cooled shortbread, spread evenly, and let it set at room temp or in the fridge.
6. Melt chocolate using a double boiler or microwave. Pour over set caramel and spread with a spatula.
7. Sprinkle flaky sea salt if desired. Let chocolate firm up completely before slicing.
8. Use a warm, sharp knife to slice into bars for clean edges. Serve and enjoy.
Notes
Use a heavy-bottomed saucepan to prevent the caramel from burning.
Line your baking pan well for easy lifting and cleaner cuts.
Let the chocolate come to room temp slightly before slicing to avoid cracks.
