Ingredients
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
2 tbsp chili powder
1 tsp ground cumin
2 tbsp tomato paste
1 cup tomato sauce
1 cup beef broth
1/2 tsp salt
1/2 tsp black pepper
8 medium flour tortillas
2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
Optional: fresh cilantro or green onions for garnish
Instructions
1. Preheat oven to 375°F (190°C).
2. In a large skillet over medium heat, cook ground beef and diced onions until beef is no longer pink. Drain excess grease.
3. Add minced garlic to the skillet and sauté for 1 minute. Set aside.
4. In a saucepan, heat 1 tablespoon oil. Add chili powder, cumin, and tomato paste. Stir until fragrant.
5. Pour in tomato sauce and beef broth. Simmer for 10 minutes, season with salt and pepper.
6. Spread a spoonful of sauce in the bottom of a 9×13-inch baking dish.
7. Fill tortillas with beef mixture, roll them, and place seam-side down in the dish.
8. Pour remaining sauce over enchiladas and top with shredded cheese.
9. Bake uncovered for 20–25 minutes, until cheese is bubbly and golden.
10. Garnish with cilantro or green onions. Serve warm.
