Description

Ingredients

1 ½ cups old-fashioned rolled oats

10 oz soft caramels

¼ cup heavy cream

2 tablespoons unsalted butter

½ teaspoon vanilla extract

Flaky sea salt, for topping


Instructions

1. In a heavy-bottom saucepan over medium heat, combine soft caramels, heavy cream, and butter. Stir continuously until the mixture is melted and smooth.

2. Remove from heat and stir in the vanilla extract.

3. Add the rolled oats and mix until evenly coated with the caramel.

4. Drop spoonfuls of the mixture onto parchment-lined baking sheets using a scoop or spoon.

5. Lightly press each scoop into a cookie shape if needed.

6. Sprinkle each cookie with flaky sea salt while still warm.

7. Let cookies set at room temperature for 30 minutes, or refrigerate for 10–15 minutes for quicker results.

Notes

For firmer cookies, refrigerate for at least 15 minutes before serving.
