Ingredients
1 ½ cups old-fashioned rolled oats
1 cup all-purpose flour
¾ cup brown sugar, packed
½ teaspoon baking soda
¼ teaspoon salt
¾ cup unsalted butter, cold and cubed
1 teaspoon vanilla extract
¾ cup fruit jam or preserves (raspberry, strawberry, or any favorite)
Instructions
1. Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
2. In a large bowl, mix oats, flour, brown sugar, baking soda, and salt until well combined.
3. Cut in the cold butter using a pastry cutter or fork until the mixture is crumbly.
4. Stir in the vanilla extract.
5. Press half the mixture into the bottom of the lined pan to form a crust.
6. Spread the jam evenly over the crust, avoiding the edges.
7. Crumble the remaining oat mixture over the top of the jam.
8. Bake for 30-35 minutes or until the top is golden and set.
9. Allow to cool in the pan for 1 hour before lifting and slicing into bars.
Notes
For neater bars, chill before slicing.
Swap the jam with lemon curd or apple butter for a seasonal twist.
Add chopped nuts or shredded coconut for added texture.
