These moist and rich banana chocolate muffins are made in one bowl, making them incredibly easy to prepare. A perfect way to use ripe bananas and satisfy your chocolate cravings in a single bite!
Ingredients
3 ripe bananas, mashed
1/2 cup melted butter (or vegetable oil)
3/4 cup brown sugar
1 large egg
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 cup chocolate chips (plus extra for topping)
Instructions
- Preheat oven to 350°F (175°C) and prepare a muffin tin.
- Mash bananas in a large bowl.
- Add melted butter, brown sugar, egg, and vanilla. Mix well.
- Sprinkle in flour, baking soda, and salt. Fold until just combined.
- Fold in chocolate chips.
- Fill muffin cups 3/4 full. Top with extra chips.
- Bake for 18-22 minutes until a toothpick comes out clean.
- Cool for 5 minutes in the pan, then transfer to a wire rack.
