Ingredients
2 chicken breasts
1 cup orzo pasta
2 cups fresh spinach
1 cup mushrooms sliced
3 cloves garlic minced
1/2 onion diced
2 cups chicken broth
1/2 cup heavy cream
1/2 cup parmesan cheese grated
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Season chicken with salt and pepper and sear in olive oil until golden and cooked through then set aside
2. Cook onion in the same pan until soft then add garlic and sauté until fragrant
3. Add mushrooms and cook until browned and tender
