Description

A rich, creamy pasta dish made in one pot for easy cooking and cleanup. Juicy chicken breasts, sun-dried tomatoes, and spinach mingle in a luscious parmesan cream sauce for a comforting Tuscan-inspired meal.


Ingredients

Chicken breasts

Pasta (penne or rigatoni)

Sun-dried tomatoes

Fresh spinach

Heavy cream

Parmesan cheese

Garlic powder

Onion powder

Olive oil

Butter

Chicken broth

Salt and pepper


Instructions

  1. Season chicken breasts with salt, pepper, and garlic powder.
  2. Sear chicken in olive oil and butter over medium heat until golden and cooked through. Set aside.
  3. In the same pot, add more butter if needed and sauté garlic and sun-dried tomatoes.
  4. Pour in chicken broth and heavy cream. Bring to a simmer.
  5. Add uncooked pasta and stir occasionally until pasta is al dente.
  6. Stir in parmesan cheese to thicken the sauce.
  7. Return chicken to the pot and add fresh spinach. Simmer until spinach wilts.
  8. Serve hot with extra parmesan and black pepper.
