Description
A creamy, cheesy, and savory pasta dish made entirely in one pot! This recipe features golden-seared chicken, tender penne, and a rich garlic parmesan sauce—perfect for busy weeknights or cozy family dinners.
Ingredients
1 lb boneless, skinless chicken breasts, diced
2 tablespoons olive oil
2 tablespoons butter (plus more if needed)
4 cloves garlic, minced
2 cups chicken broth
1 1/2 cups heavy cream
8 oz penne pasta (uncooked)
1 cup freshly grated Parmesan cheese
1 teaspoon Italian seasoning
Salt and pepper to taste
Chopped fresh parsley for garnish (optional)
Instructions
- Heat olive oil and 2 tablespoons of butter in a large pot over medium-high heat. Add diced chicken, season with salt, pepper, and Italian seasoning. Sear until golden brown and cooked through. Remove chicken and set aside.
 - In the same pot, reduce heat to medium. Add minced garlic and sauté until fragrant (about 1 minute).
 - Pour in chicken broth and heavy cream. Bring to a light simmer. Stir in uncooked penne pasta.
 - Cover and cook for 10-12 minutes, stirring occasionally, until pasta is tender and most of the liquid is absorbed.
 - Lower heat and stir in Parmesan cheese until melted and the sauce thickens.
 - Return the cooked chicken to the pot and stir to combine. Let it warm through for a minute or two.
 - Garnish with chopped parsley if desired and serve hot.
