Description

A creamy, cheesy, and savory pasta dish made entirely in one pot! This recipe features golden-seared chicken, tender penne, and a rich garlic parmesan sauce—perfect for busy weeknights or cozy family dinners.


Ingredients

1 lb boneless, skinless chicken breasts, diced

2 tablespoons olive oil

2 tablespoons butter (plus more if needed)

4 cloves garlic, minced

2 cups chicken broth

1 1/2 cups heavy cream

8 oz penne pasta (uncooked)

1 cup freshly grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Chopped fresh parsley for garnish (optional)


Instructions

  1. Heat olive oil and 2 tablespoons of butter in a large pot over medium-high heat. Add diced chicken, season with salt, pepper, and Italian seasoning. Sear until golden brown and cooked through. Remove chicken and set aside.
  2. In the same pot, reduce heat to medium. Add minced garlic and sauté until fragrant (about 1 minute).
  3. Pour in chicken broth and heavy cream. Bring to a light simmer. Stir in uncooked penne pasta.
  4. Cover and cook for 10-12 minutes, stirring occasionally, until pasta is tender and most of the liquid is absorbed.
  5. Lower heat and stir in Parmesan cheese until melted and the sauce thickens.
  6. Return the cooked chicken to the pot and stir to combine. Let it warm through for a minute or two.
  7. Garnish with chopped parsley if desired and serve hot.
