Ingredients
1 lb ground beef
1 medium onion, chopped
3 cloves garlic, minced
2 tbsp tomato paste
1 can (28 oz) crushed tomatoes
4 cups beef broth
1 tsp Italian seasoning
1/2 tsp dried basil
1/4 tsp red pepper flakes
8 lasagna noodles, broken into pieces
3/4 cup ricotta cheese
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Salt and pepper to taste
Instructions
1. In a large Dutch oven, brown ground beef over medium heat. Drain excess grease if needed.
2. Add chopped onion and garlic. Sauté for 3–4 minutes until fragrant and soft.
3. Stir in tomato paste, crushed tomatoes, Italian seasoning, basil, red pepper flakes, salt, and pepper. Cook for 2–3 minutes.
4. Pour in beef broth and bring to a boil. Add broken lasagna noodles. Simmer for 15–20 minutes or until noodles are tender.
5. Spoon soup into bowls. Top each serving with ricotta, mozzarella, and Parmesan. Serve hot.
Notes
For a lighter version, substitute ground turkey or chicken.
