Ingredients
2 cans butter beans
3 cloves garlic, minced
0.5 cup sun-dried tomatoes, chopped
2 cups fresh spinach
0.5 cup vegetable or chicken broth
0.75 cup heavy cream
0.33 cup grated parmesan cheese
2 tablespoons olive oil
0.25 teaspoon red pepper flakes
Salt and black pepper, to taste
Instructions
1. Heat olive oil in a large skillet over medium heat. Add the minced garlic and sun-dried tomatoes. Sauté for 2-3 minutes until fragrant.
2. Pour in the broth and heavy cream. Stir to combine and bring the mixture to a gentle simmer.
3. Add the drained butter beans and stir gently into the sauce. Simmer for 5-7 minutes.
4. Reduce the heat and stir in parmesan cheese until melted. Add spinach and stir until wilted.
5. Season with red pepper flakes, salt, and black pepper. Let rest for 2 minutes, then serve.
Notes
For a heartier dish, add grilled chicken or sausage.
Swap spinach for kale if desired—just cook it a bit longer.
Stir in extra broth or cream if reheating leftovers for the best texture.
