Ingredients

1 pound shrimp, peeled and deveined

1 cup orzo pasta

1 tablespoon olive oil

1 cup cherry tomatoes

3 garlic cloves, minced

2 cups chicken broth

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/4 teaspoon red pepper flakes (optional)

2 tablespoons chopped fresh parsley

Salt and pepper, to taste


Instructions

1. Heat olive oil in a large skillet over medium-high heat. Season the shrimp with salt and pepper, then add to the pan. Cook until pink and golden, about 2-3 minutes per side. Remove shrimp and set aside.

2. In the same skillet, add more olive oil if needed. Add the minced garlic and cherry tomatoes. Sauté until the tomatoes blister and garlic is fragrant, about 3-4 minutes.

3. Add the orzo, chicken broth, and Italian seasoning to the skillet. Stir well, scraping up any bits from the pan. Bring to a simmer, cover, and cook for 8-10 minutes or until orzo is tender and liquid is mostly absorbed.

4. Return the shrimp to the skillet. Stir in Parmesan cheese and parsley. Season with red pepper flakes, salt, and pepper to taste.

5. Serve hot with extra Parmesan and parsley if desired.

Notes

Use freshly grated Parmesan for the creamiest finish.

Don’t overcook the shrimp; remove them from heat once they turn pink.

Add a splash of cream or mascarpone for extra richness if preferred.
