Ingredients

1 lb beef sirloin or ribeye, thinly sliced

1 tbsp olive oil

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

2 cloves garlic, minced

8 oz penne or rigatoni pasta

3 cups beef broth

4 oz cream cheese, softened

1 cup shredded provolone or mozzarella cheese

1/2 tsp salt (adjust to taste)

1/2 tsp black pepper

1/4 tsp paprika

Fresh parsley, chopped (for garnish)

Instructions

  1. Heat oil in a large skillet or Dutch oven over medium-high heat. Add sliced beef and sear until browned. Remove and set aside.
  2. In the same pot, sauté bell peppers, onions, and garlic until softened.
  3. Return beef to the pot. Add uncooked pasta and pour in beef broth.
  4. Bring to a boil, then reduce to simmer. Cover and cook for 12–15 minutes until pasta is tender.
  5. Stir in cream cheese until melted. Add shredded cheese and mix until sauce is creamy.
  6. Season with salt, pepper, and paprika. Garnish with parsley and serve hot.
