1 small onion, chopped
3 garlic cloves, minced
1 bell pepper, chopped (any color)
1/2 cup sliced black olives
1 cup pepperoni slices, divided
3 cups marinara sauce
2 to 2.5 cups water (enough to cover pasta)
2 cups shredded mozzarella cheese
1 teaspoon Italian seasoning

- Heat olive oil in a large skillet or Dutch oven over medium heat. Add chopped onion and minced garlic, cook until softened.

- Bring to a boil, then reduce heat. Cover and simmer for 12–15 minutes, stirring occasionally.
- Once pasta is al dente and liquid mostly absorbed, sprinkle mozzarella on top. Add remaining pepperoni and olives.
