Preparation Phase & Tools to Use

Getting the best results from this dish depends a lot on using the right tools, especially since everything is made in one skillet.

Essential Tools & Why They Matter:

  • Large Oven-Safe Skillet (preferably cast iron or stainless steel): Holds heat well for an even sear on the chicken and seamless stovetop-to-oven cooking.
  • Sharp Knife & Cutting Board: For slicing mushrooms, garlic, and prepping your herbs.
  • Meat Tongs: Helps turn the chicken without piercing the skin, keeping juices inside.
  • Microplane or Grater: Ideal for finely grating Gruyere so it melts smoothly into the sauce.
  • Wooden Spoon or Silicone Spatula: For stirring without scratching your pan.

Ingredients for the One-Skillet Creamy Chicken with Gruyere & Orzo

  • Bone-in, skin-on chicken thighs: Adds deep flavor and keeps the meat juicy while searing.
  • Orzo pasta: The rice-like shape soaks up every bit of the creamy sauce while staying tender.
  • Gruyere cheese: Melts beautifully into the sauce with nutty richness.
  • Mushrooms: Add earthiness and bulk, balancing the richness.
  • Fresh thyme: Brings a floral brightness that lifts the whole dish.
  • Garlic cloves: Essential for the base of the sauce.
  • Chicken broth: Infuses the orzo with extra savory depth.
  • Heavy cream: Rounds out the sauce and creates that creamy texture.
  • Olive oil + Butter: Helps achieve golden sear and enrich the flavor.

How To Make the One-Skillet Creamy Chicken with Gruyere & Orzo

Step 1: Sear the Chicken

Pat chicken thighs dry and season with salt and pepper. Heat olive oil and a bit of butter in a large oven-safe skillet over medium-high heat. Sear the chicken skin-side down until golden brown and crisp, about 5-6 minutes. Flip and sear the other side for 2-3 minutes. Remove and set aside.

Step 2: Sauté Aromatics and Mushrooms

In the same skillet, add sliced mushrooms and a bit more butter if needed. Sauté until golden. Add minced garlic and fresh thyme, stirring until fragrant.

Step 3: Toast Orzo and Deglaze

Add dry orzo directly to the skillet. Toast lightly for 1-2 minutes. Pour in chicken broth and a splash of heavy cream, scraping up any browned bits from the pan for extra flavor.

Step 4: Add Chicken & Simmer

Nestle the seared chicken thighs back into the skillet. Cover and reduce heat to low. Let simmer for 10-12 minutes until orzo is tender and most liquid is absorbed.

Step 5: Finish with Gruyere

Sprinkle Gruyere over the dish. Cover for another 2-3 minutes until the cheese melts. Optionally, place under a broiler for a bubbly golden top.

Serving and Storing This Creamy Chicken Dish

Serve hot straight from the skillet, garnished with more fresh thyme or a few grinds of black pepper. It pairs beautifully with a crisp salad or steamed green beans.

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently over low heat, adding a splash of broth or cream if needed to loosen the sauce.

Frequently Asked Questions

Can I use chicken breasts instead of thighs?

Yes, but keep an eye on cooking time. Breasts cook faster and can dry out more easily than thighs.

What can I substitute for Gruyere?

Swiss, fontina, or even sharp white cheddar can work in a pinch.

Can I make this dish ahead of time?

It’s best fresh, but you can prepare the components (chicken, orzo, sauce) a few hours ahead and warm everything together before serving.

Is this recipe freezer-friendly?

Orzo tends to get mushy when frozen and reheated, so it’s not ideal for freezing.

Can I make it dairy-free?

Yes! Swap heavy cream with unsweetened oat cream and use a dairy-free cheese alternative or omit cheese entirely.

What if I don’t have fresh thyme?

Dried thyme can be used; start with 1 teaspoon and adjust to taste.

Description

This one-skillet creamy chicken with Gruyere and orzo is a comforting, all-in-one dinner perfect for weeknights. Tender chicken thighs are seared to perfection and nestled into a creamy, thyme-scented Gruyere sauce with tender orzo pasta and sautéed mushrooms. An easy, elegant meal with minimal cleanup!

Ingredients

1 ½ pounds bone-in, skin-on chicken thighs

1 cup orzo pasta

1 cup sliced mushrooms

1 cup shredded Gruyere cheese

1 ½ cups chicken broth

½ cup heavy cream

2 tablespoons olive oil

2 tablespoons unsalted butter

3 cloves garlic, minced

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

Salt and black pepper, to taste

Instructions

1. Pat chicken thighs dry and season with salt and pepper.

2. Heat olive oil and 1 tablespoon butter in a large oven-safe skillet over medium-high heat. Sear chicken thighs skin-side down for 5-6 minutes until golden. Flip and cook another 2-3 minutes. Remove and set aside.

3. Add remaining butter to the skillet. Sauté sliced mushrooms until golden, then stir in minced garlic and thyme until fragrant.

4. Stir in the orzo and toast lightly for 1-2 minutes.

5. Pour in chicken broth and heavy cream. Scrape up any brown bits from the bottom of the pan.

6. Return chicken thighs to the skillet, nestling them into the orzo mixture. Cover and simmer over low heat for 10-12 minutes.

7. Remove lid and sprinkle Gruyere evenly over the skillet.

8. Cover for another 2-3 minutes or place under a broiler until cheese is melted and bubbly.

9. Serve hot with additional thyme or black pepper if desired.

Notes

For best sear, don’t move the chicken until it naturally releases from the pan.

If the sauce thickens too much, add a splash of broth when reheating.

Freshly grated Gruyere melts better and more smoothly than pre-shredded cheese.
