  • Author: Kate Walton
  • Total Time: 25 minutes
  • Yield: Serves 4

Description

A flaky, juicy, and flavor-packed main course that’s both easy to make and elegant enough to serve guests. This oven baked salmon is seasoned simply and baked over lemon slices for a zesty and aromatic dinner in under 20 minutes.

Ingredients

4 salmon fillets (6 oz each)

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

45 sprigs fresh thyme or dill

1 lemon, thinly sliced

1 cup cherry tomatoes (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking tray with parchment paper or lightly grease.
  2. Arrange lemon slices on the tray to form a bed for the salmon.
  3. Pat salmon fillets dry and brush both sides with olive oil.
  4. Season with salt, pepper, paprika, and rub minced garlic on top.
  5. Place fillets skin-side down on the lemon slices. Top with fresh herbs and scatter cherry tomatoes around (if using).
  6. Bake for 12–15 minutes or until salmon flakes easily with a fork. Optional: broil for 2 extra minutes for a crispier top.
  7. Remove from oven and let rest for 2 minutes before serving.
