Instructions
- Preheat the oven to 425°F (220°C).
- Wash and slice the potatoes into 1/4-inch rounds (or halve if using baby potatoes).
- Chop onions into bite-sized pieces.
- In a large bowl, combine potatoes, onions, olive oil, garlic, salt, pepper, and herbs. Toss until evenly coated.
- Spread mixture on a parchment or foil-lined baking sheet in a single layer.
