Ingredients

2 large chicken breasts or 4 thighs, diced

1.5 pounds baby red and gold potatoes, chopped

3 tablespoons olive oil

2 tablespoons Cajun seasoning

4 cloves garlic, minced

1/2 cup freshly grated Parmesan cheese

2 tablespoons chopped fresh parsley


Instructions

1. Preheat oven to 425°F (220°C). Cut potatoes and chicken into bite-sized pieces.
