Parmesan Crusted Potatoes

Description

Golden and crispy on the outside, tender on the inside—these Parmesan Crusted Potatoes are the ultimate side dish. Coated with a flavorful crust of cheese and seasoning, they’re oven-roasted to perfection and ideal for pairing with just about any meal.


Ingredients

1.5 lbs baby gold or Yukon gold potatoes (about 1012 small potatoes)

3/4 cup grated Parmesan cheese

2 tablespoons olive oil or melted butter

1 teaspoon garlic powder

Salt and black pepper to taste

1 tablespoon chopped parsley (optional)


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Slice potatoes in half lengthwise. Score cut sides with a knife if desired.
  3. Mix Parmesan coating: In a bowl, combine Parmesan, garlic powder, salt, and pepper. Spread mixture on baking sheet.
  4. Prepare potatoes: Brush cut sides with olive oil or butter. Place them cut-side down on the Parmesan mixture.
  5. Bake for 25–30 minutes, or until the potatoes are fork-tender and crust is golden brown.
  6. Serve: Cool slightly, then remove from tray. Garnish with parsley and extra cheese if desired.
