Ingredients
1 box (3.4 oz) instant pistachio pudding mix
1 cup (2 sticks) unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
2 1/2 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
For the Frosting:
1 1/2 cups powdered sugar
2–3 tbsp milk (adjust for consistency)
1/3 cup crushed pistachios (for topping)
Instructions
- Preheat oven to 350°F (175°C) and line a 9×13-inch pan with parchment paper.
- Cream butter and sugar together until light and fluffy.
- Add eggs one at a time, then stir in vanilla and pudding mix.
- In a separate bowl, whisk flour, baking soda, and salt. Gradually combine with wet ingredients.
- Spread dough evenly into the prepared pan.
- Bake for 20–24 minutes or until lightly golden at the edges.
- Let bars cool completely in the pan.
- Mix powdered sugar and milk until smooth and spreadable.
- Spread glaze over cooled bars and top with crushed pistachios.
- Let frosting set, then slice and serve.
