Ingredients
2 lbs Yukon Gold or Russet potatoes, peeled and cubed
2 tablespoons butter or vegan butter (for the potatoes)
Salt and pepper to taste

1 medium onion, finely chopped
3 cloves garlic, minced
12 oz mushrooms, sliced (cremini, button, or wild mix)
2 tablespoons all-purpose flour
2 cups vegetable broth
1 tablespoon fresh parsley or thyme, chopped
Instructions

Boil the potatoes in salted water until fork-tender, about 15–20 minutes. Drain and mash with butter, salt, and pepper. Keep warm.

In a skillet, melt butter over medium heat. Add onion and sauté until translucent. Add garlic and cook another minute.
