Ingredients

2 lbs Yukon Gold or Russet potatoes, peeled and cubed

2 tablespoons butter or vegan butter (for the potatoes)

Salt and pepper to taste

1 medium onion, finely chopped

3 cloves garlic, minced

12 oz mushrooms, sliced (cremini, button, or wild mix)

2 tablespoons all-purpose flour

2 cups vegetable broth

1 tablespoon fresh parsley or thyme, chopped


Instructions

  1. Boil the potatoes in salted water until fork-tender, about 15–20 minutes. Drain and mash with butter, salt, and pepper. Keep warm.

  2. In a skillet, melt butter over medium heat. Add onion and sauté until translucent. Add garlic and cook another minute.

  3. Add mushrooms and cook until browned and their moisture has evaporated, about 8–10 minutes.

  4. Sprinkle flour over mushrooms and stir to coat. Cook 1–2 minutes.

  5. Gradually add vegetable broth, stirring constantly to prevent lumps. Simmer until thickened.

  6. Season with salt, pepper, and fresh herbs.

  7. Serve mashed potatoes with generous spoonfuls of mushroom gravy.
