Ingredients
1 cup pumpkin puree
1 cup brown sugar
1/2 cup granulated sugar
1/2 cup vegetable oil
1 large egg
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 tablespoon pumpkin pie spice
1/2 teaspoon salt
1 cup semi-sweet chocolate chips
Instructions
1. Preheat the oven to 350°F (175°C). Line a 9×13 baking dish with parchment paper.
2. In a large mixing bowl, whisk together the pumpkin puree, brown sugar, granulated sugar, oil, egg, and vanilla extract until smooth.
3. In a separate bowl, whisk together the flour, baking soda, pumpkin pie spice, and salt.
4. Gradually stir the dry ingredients into the wet ingredients until just combined—do not overmix.
5. Fold in most of the chocolate chips, reserving a small handful for topping.
6. Spread the batter evenly in the prepared pan and sprinkle with remaining chocolate chips.
7. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean or with moist crumbs.
8. Let cool in the pan for 10–15 minutes before transferring to a wire rack to cool completely.
9. Slice into bars once cooled and serve.
Notes
For chewier bars, slightly reduce the flour and use more brown sugar than granulated sugar.
Do not overmix the batter or it may turn cakey—fold gently until just combined.
You can use white chocolate chips or chopped nuts instead for variation.
