Description

Soft, chewy, and packed with fall flavors, these Pumpkin Spice Cookies are the perfect autumn treat. Made with real pumpkin puree, warm spices, and a cinnamon-sugar coating, these cookies are ideal for cozy desserts, holiday bakes, and sweet gifting. Ingredients

1 cup unsalted butter, softened

1 cup brown sugar

1/2 cup granulated sugar

3/4 cup pumpkin puree

2 teaspoons vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 tablespoon pumpkin pie spice

1/4 cup granulated sugar (for rolling)

1 teaspoon ground cinnamon (for rolling)


Instructions

1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy.

3. Mix in pumpkin puree and vanilla extract until combined.

4. In another bowl, whisk together flour, baking soda, salt, and pumpkin pie spice.

5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.

6. In a small bowl, stir together the rolling sugar and cinnamon.

7. Scoop dough using a cookie scoop (about 1.5 tablespoons per ball), and roll in the cinnamon-sugar mixture.

8. Place on prepared baking sheets, spacing them 2 inches apart.

9. Bake for 10–12 minutes until edges are set but centers are soft.

10. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.

Notes

Don’t overmix the dough once the dry ingredients are added to keep cookies soft.

For extra chewiness, use dark brown sugar or slightly underbake.

If using homemade pumpkin puree, drain excess moisture before adding.
