Ingredients
2 cups powdered sugar
1/4 cup sweetened condensed milk
1 teaspoon peppermint extract
1 1/2 cups dark or semi-sweet chocolate chips
1 tablespoon coconut oil (or shortening)
2 tablespoons crushed candy canes (optional for topping)
Instructions
1. In a large mixing bowl, beat together the powdered sugar, sweetened condensed milk, and peppermint extract until a thick, pliable dough forms.
2. Roll the dough into 1-tablespoon-sized balls and flatten gently into discs.
3. Place the discs on a parchment-lined baking sheet and freeze for 10 minutes to firm up.
4. While chilling, melt the chocolate chips with coconut oil in a microwave-safe bowl or double boiler until smooth.
5. Using a fork, dip each peppermint disc into the melted chocolate and let the excess drip off. Place them back on the tray.
6. Sprinkle with crushed candy canes while the chocolate is still wet.
7. Let set at room temperature or refrigerate until firm.
